I just did this after going from 31 to 33 inch tires.. it's very easy.

Get on the highway and drive 10 miles according to the mile markers.  Note
what your odometer read.  Divide what your odometer read by 10 and multiply
it by the number of teeth on your current speedometer gear.

I did this and and in 10 miles my odometer advanced 8.75 miles.  I took out
the speedo gear I was using (very easy - take out 1 bolt and pull straight
out of the transfer case).  I counted the gears and counted 18 teeth (yellow
gear).  18 x .875 = 15.75  so I decided to go with a 16 tooth gear.

I went to the local Ford dealer and found the right 16 tooth gear I needed
(wine color) but they didn't have it and couldn't order it.  They directed
me to a local place that specializes in outdated Ford parts and I found it
there.   I check it against my friend's villager with a digital speedometer
and it was dead on at 60 - 70.
